Thai hot chicken soup. Ideal as a starter in meals. Is great appetizer. Very quick and easy to prepare.
The Thai Mix \ is hot, so try the soup before adding the chiles and you can add mushrooms.

Recipe – 4 Servings

Ingredients:

  • 3-4 Thin slices peeled fresh Galangal
  • 2 Lemon grass stalks (bottom 5 inches only), coarsely chopped
  •  Cup chicken breast (cut into thin strips)
  • 1 Can chicken broth
  • 1 Can (13.5 oz each) lite coconut milk
  • 1/2 Cup dry white wine
  • 2 Tablespoons fish sauce or tamari sauce
  • 2 Tablespoons red curry paste
  • 3 Fresh (1 1/2-inch) Thai Chiles or 2 fresh jalapeño Chiles, trimmed and coarsely chopped (seed Chiles if a milder flavor is desired)
  • 4 Thai basil leaves
  • Fresh cilantro leaves for garnish, optional

Directions:

Combine all ingredients, except cilantro, in a medium saucepan.

Cook over medium to medium-low heat 15 minutes or until hot and flavors have blended, stirring occasionally.
