INGREDIENTS
1. 2 tablespoons olive oil
2. 1 medium onion, coarsely chopped
3. 1/4 cup finely chopped fresh cilantro stems
4. 2 garlic cloves, coarsely chopped
5. 1 (2 1/4-pound) piece Calabaza Arjuna
6. 4 cups water
7. 2 teaspoons salt
8. 1/4 teaspoon cayenne
9. ½ Tsp. salt and pepper
10. Rosemary for garnish

DIRECTIONS

Heat oil olive, then sautés onion, stirring occasionally, until beginning to soften and edges are browned about 4 minutes. Add cilantro stems and garlic and cook, stirring occasionally, 3 minutes. Add Calabaza pieces and cook, stirring frequently, 3 minutes. Stir in water, salt, and cayenne and simmer, uncovered, stirring occasionally, until squash is very tender, about 15 minutes. Add rosemary for garnish
