Long Squash Cream Soup

Recipe – 4 Servings
1 long squash
1/3 cup of chopped leaks
1/3 cup of flour
2 tbsp of minced garlic
1 sweet potato peeled and diced
½ potato- peeled and diced
1/3 cup sliced carrots
3 tbsp. of canola oil
4 cups of vegetable broth
Salt pepper to taste
6 Italian parsley leaves for garnish
In a pot, heat oil, garlic, carrots, and leaks; Allow it to cook for 4-5 mins then add potatoes, long squash, and flour.
Cook flour down until it has a paste consistency; add broth and cover, Let simmer for 10-15 min until tender.
Use blender to cream soup and add salt and pepper to taste.
