Baked Mashed Yam with Green Zucchini

2 Servings


1. 4 Vega Green Zucchini

2. 1  big Vega Yam

3. 1 cup milk

4. 1 tbsp. butter

5. 1 clove garlic, minced

6. 1 tbsp. olive oil

7. 1 tbsp. mustard

8.  salt and pepper

9. rosemary for garnish


Heat oven to 350°F.

For Mashed Yam
Bring a pot of salted water to a boil. Add yam and cook until tender but still firm, about 15 minutes; drain. In a small saucepan heat, butter and milk over low heat until butter is melted. Using a potato masher or electric beater, slowly blend milk mixture into Yam until smooth and creamy.

For Green Zucchini
Cut zucchini in thin slices and when the mashed yam is cool, do three small rounded pieces and covered with the zucchini.

Meanwhile, in a medium bowl, combine olive oil, garlic, mustard, salt, and pepper, spread over the zucchini.
Bake about 15 minutes or until golden.
