Ingredients
1-2tbspcoconut oil
1-2long squash
1-2bell peppersyellow and red
1/2onionvertically sliced
1tspgarlicminced
2tspgingerminced or grated fine
1cupcoconut milk
1-2tbspthai green curry pastespicy
1lime zest and juice
2tspbrown sugar
1tspgarlicminced
1tbspgingerminced
Fresh cilantro and/or basil for garnish
Instructions
To a wok or large saute pan over high heat, add coconut or vegetable oil. When oil is hot, add opo squash. Stir-fry 1 to 2 minutes, then add peppers, onion, garlic, and ginger. Stir-fry another 1 to 2 minutes.
Mix together second part of ingredients to create coconut curry sauce or marinade.
Add to wok coconut curry sauce, stir, and cover. Simmer just until vegetables are tender.
Garnish with chopped cilantro and/or basil if desired.
