Creamy Mashed Pumpkin
Creamy Mashed pumpkin is really good! It has a more delicate texture and flavor than mashed potatoes or mashed sweet potatoes.
Ready in 30 minutes
1. 1/2 pound Vega Calabaza Pumpkin
2. 1/2 cup cheddar cheese, grated
3. 1/4 cup heavy cream
4. 2 teaspoons minced garlic
5. 1/2 teaspoon ground cinnamon
WHAT TO DO
Remove the seeds and skin from pumpkin and cut into smaller pieces.
Boil steam or microwave the pump until tender.
Drain pumpkin and mash the pumpkin until smooth, add grated cheese, garlic, cream (enough to make smooth), pepper and salt and continue to mash until cheese has melted.
