Thai Curried Long Squash

Ingredients

  • 1-2 tbsp coconut oil
  • 1-2 long squash
  • 1-2 bell peppers yellow and red
  • 1/2 onion vertically sliced
  • 1 tsp garlic minced
  • 2 tsp ginger minced or grated fine
  • 1 cup coconut milk
  • 1-2 tbsp thai green curry paste spicy
  • 1 lime zest and juice
  • 2 tsp brown sugar
  • 1 tsp garlic minced
  • 1 tbsp ginger minced
Fresh cilantro and/or basil for garnish

Instructions

  • To a wok or large saute pan over high heat, add coconut or vegetable oil. When oil is hot, add opo squash. Stir-fry 1 to 2 minutes, then add peppers, onion, garlic, and ginger. Stir-fry another 1 to 2 minutes.

  • Mix together second part of ingredients to create coconut curry sauce or marinade.

  • Add to wok coconut curry sauce, stir, and cover. Simmer just until vegetables are tender.

  • Garnish with chopped cilantro and/or basil if desired.
